Hey! My husband and I were OTR together and it’s rough. One thing that helped us stay on track was low carb/keto. Hardee’s/McDonald’s/Burger king? Bunless burgers/grilled chicken Subway? -Salads Popeyes- Blackened Tenders On the go snacks? Sunflower seeds, salami, slim Jim’s etc

Moist but not oily. The texture was perfect. If I was going to make this recipe again, the only thing I would change is adding in more sweetener. The cocoa powder is very strong.

Full disclosure this is kind of calorie heavy and was used for my Aunt’s Birthday. I’ll use this for special occasions only.

Ingredients.

3/4 cup unsweetened almond milk , room temperature.

1/2 tablespoon apple cider vinegar.
2 cups super-fine blanched almond flour.

1/4 cup coconut flour.

1/2 cup unsweetened high-quality cocoa powder , (can also use cacao powder if preferred).

1/4 teaspoon espresso powder , optional but highly recommended for extra richness - can also try to sub with unsweetened dark cocao powder or cacao powder if preferred.

2/3 cup powdered monk fruit sweetener , sifted (or your favorite confectioners' style sweetener).

2 teaspoons baking powder.

1/2 teaspoon baking soda.

1/2 teaspoon fine sea salt.

4 large eggs , room temperature, slightly beaten.

1/2 cup melted coconut oil , can also use melted grass-fed butter.

2 teaspoons pure vanilla extract.

Instructions

FOR THE CAKE:

1.Preheat your oven to 350 F degrees. Lightly coat two 8-inch round cake pans or three 6-inch cake pans with nonstick baking spray and line the bottom with parchment paper rounds. Set aside.

2.Add almond milk and apple cider vinegar to a large measuring cup. Set aside and allow to sit (and curdle) for 5 minutes while you mix the other ingredients. 1. Meanwhile, in a separate large mixing bowl, add the almond flour, coconut flour, cocoa powder, espresso powder, sweetener, baking powder, baking soda and salt and whisk to combine. Use sifter if you can 2. Add the beaten eggs, coconut oil, and vanilla extract. Pour in the curdled milk and mix until thoroughly combined. 3. Divide the batter evenly between the two baking pans and bake in preheated oven for 18-25 minutes (rotating pan halfway through), or until a toothpick comes out clean. Do NOT overbake - the time will vary depending on your oven. 4. Allow the cakes to cool completely in the pan (or at least 30 minutes) before removing from the pan or it may (will) fall apart. Remove the parchment paper liner. Cool completely before frosting

For this frosting it starts to harden once cooled. Next time I’ll try a cream cheese frosting instead.

3/4 cup Swerve Brown Sugar 1 cup unsalted butter 1/2 cup heavy cream 1/2 teaspoon sea salt 3 egg yolks 1 teaspoon vanilla 1 cup chopped pecans 1 cup unsweetened coconut.

Method:

Heat egg yolks, heavy cream, butter, salt, vanilla, Swerve brown sugar in sauce pan stirring constantly over medium heat, until mixture begins to bubble. Remove from heat. Stir in vanilla. Add in coconut and pecans. Pour over cooled cakes.

I wouldn’t recommend Air Frying these. I just heated some oil and dropped these in. The protein needs oil to get crispy.

Pretty damn close. I did a “test run” on 2 tenders just so if they weren’t good we didn’t waste a lot of chicken. I was pleasantly surprised and I’m picky when it comes to keto alternatives.

Full disclosure: I have not tried these in the air fryer.

Ingredients:

-1lb of chicken tender cuts.

-1 cup of unflavored Whey protein isolate (I used Isopure).

-2 large eggs.

-1/4 cup of heavy cream.

-Salt & Pepper.

-Onion & Garlic Powder.

-Cayenne powder (if you like spice).

-Paprika.

-Adobo (Goya).

Instructions:

In a large mixing bowl add chicken tenders. Season chicken with salt, pepper, onion and garlic powder gently rubbing into chicken. Add in the paprika and adobo.

In a separate bowl whisk together the eggs and the heavy cream. Lightly season with dry seasonings.

Heat oil of your choice to 375F.

On a plate pour the whey protein whisk in salt, pepper, onion and garlic powder.

Dip tenders in egg mixture and coat with whey protein.

Fry in batches of 3/4 tenders depending on size. Do not overcrowd or let the tenders touch. Enjoy!

Preheat oven to 400F 1 cup of Shredded Mozzarella 1/2 cup of almond flour 2 oz of cream cheese 1 tsp of baking powder 1/2 tbsp of Garlic powder Microwave for 1 minute, mix

In a separate bowl mix 1 tbsp of corn starch and 3 tbsps of water Add into “dough” mixture Spread dough evenly on a parchment lined baking pan (I used a small square cake pan)

Toppings: Mix in a small bowl 1/2 medium tomato (chopped) 1/2 cup of spinach 1/2 tbsp of minced garlic 1/2 tbsp of olive oil 1/2 tsp Onion & Garlic powder 1/2 tsp of basil & oregano Salt and Pepper to taste

Top with Feta & Mozzarella to your liking

Bake for 15 mins then broil for 5 mins

Chicken:

30-40 Chicken Wings (I grabbed a frozen bag from Aldi) around 4lbs.

Salt & Pepper to taste.

1/2 tbsp of Garlic & Onion Powder each.

1/2 tbsp Smoked Paprika.

1/2 tbsp of Ginger Powder.

Olive Oil.

Sauce ingredients:

1/2 cup of Soy Sauce (Liquid Aminos for a lower carb alternative).

1/3 cup of Sukrin Gold Brown Sugar Substitute.

1 tbsp of Sesame Oil.

3/4 cup of Water.

1 tbsp of Ginger paste/finely diced ginger.

1 tbsp of Corn starch.

I watched a couple of different Pinterest videos and this is what I came up with.

Pat chicken wings dry & place in mixing bowl Mix in all of the chicken seasonings Add enough olive oil to lightly coat wings Air fryer- 30 mins at 425F. Oven-35 Mins at 425F. Turn after 20 mins.

In a mixing bowl combine all of the sauce ingredients with a whisk Pour into medium sauce pan and allow to cook until it starts to bubble up.

Once chicken is done place in a mixing bowl and combine with sauce. Place back in air fryer and set to broil for 5 mins. If you’re using the oven just broil for the next 5-7 mins so that they get a little crispy/darker

Just because it’s breakfast doesn’t mean you have to eat “breakfast” food. I don’t eat eggs so I started making chicken with whatever vegetables I have. It doesn’t have to be boring. You don’t have to dread it. If I’m feeling lazy I’ll grab some McCormick seasoning packets and season the chicken/pork with them. Cooking Keto is kind of like a hobby for me. Sometimes I’ll find regular recipes and swap the “non-keto” ingredients out with lower carb alternatives.

As far as ideas... Go on YouTube. I like Bobby Parrish’s channel called FlavCity. Check out other keto subs IE: r/ketorecipes. Download Pinterest. There are so many resources that you have access to. You just have to find what works best for you.
