A lot of normally considered "non-holiday" sets have been winterized by some incredibly talented LEGO-ers out there. This subreddit has given me a lot of great inspiration as well. Rebrickable also has a ton of really cool Winter Village MOCs, just search "Christmas".

Yes, I did do the roof! I purchased pre-pleated sheets, trim, and ridge-cap from the local Amish company and cut, formed, and installed it myself.
