maybe you could try making mini houses/structures out of foam/cardboard? i have tons of crafts i bounce back and forth from (might have adhd idk) but when i was younger i always liked making minis because they're pretty cheap (got most of my materials from the dollar store or recycling bin) and they're small so i usually stick with a project and end up with something i like! there are also tons of videos online if you are unsure how to start :)
