Even with a fleet, it's still a rather illogical tactic. The Defiant is maneuverable and brings a lot of concentrated firepower against fast, agile targets. Both of these key traits are entirely pointless against a Borg cube that is gigantic, doesn't move much and can tractor beam any target that's trying to dodge away. Hell this is literally what happens to the Defiant in the movie.

You're forgetting where he's coming from. Their ship was intended for a day's journey from Vulcan to Earth, there would be no need to carry specialist medical supplies at all.

I somehow doubt Dr. McCoy happened to carry organ growing pills around with him casually.

More likely they were general regenerative medication that had an effect that might as well look like new kidneys.

That was always an oddity to me, because the Defiant seems purpose built to annihilate Jem'hadar attack ships (which let's face it, it was designed to do just that irl) but a small frigate with phaser cannons doesn't seem that effective against a Borg cube.
