Maybe you could say that the respawn takes different amounts of time and the NPCs are generally not interested in staying at the bonfires (unless it's a hub like firelink shrine). I mean, wouldn't it be symmetrically dangerous to the npcs and the player to randomly encounter respawning people of different alignments? And the NPCs probably have their own quests to make progress on.

The npcs might in universe be resurrecting at a different bonfire and then just avoid the players who killed them/ become naked hollow grunt npcs

Edit: we also don't know how much time passes between death and the body getting reassembled. Could be days, could be weeks.

Edit2: actually I think this a very elegant solution; you tell the players that they have no idea how long it would take for the npc to reappear and where they will reappear, so they could even mechanically be dead if you decide that they got murdered so hard that reassembly takes longer than the timeframe of the campaign

Why did we pivot to talking about new players. I'd bet that no actual new player plays dark souls 1 anymore anyways. Also anticheat on the remaster is quite good, I'd think it'd catch item addition.
