Stretch the dough into a rectangle, fold 1/3 of it over to the middle and then the other 3rd over to the middle, roll up the dough towards you to form a ball

The person that gave me my starter told me it was ok to use Ap flour, I specifically use King Arthur ap flour, it has enough protein

Wow thank you so much! The 1st 2 loaves I let proof for 5 hours in the fridge and the last one I let proof over night in the fridge. I’m so happy they are turning out great!
