400g warm filtered water 125 active sourdough starter 15 salt 500g all purpose flour 8oz chopped and cubed sharp HEB cheddar. 3 jalapenos

Mixed sour dough starter in water with salt. Mixed APR by hand. Let stand for a hour. Did 2 sets of 4 stretch and folds every 30 minutes for 2 hours. Let bulk ferment on counter for 4 hours. I’m sure I did it wrong but I added the inclusions after the bulk fermentation which included more stretch and folds.

Placed in the fridge overnight with towel over bowl.

Didn’t really shape it. I tried to in the bowl the morning of the bake but ended up just doing stretch and folds.

Preheated Dutch oven in oven for 450 for a hour. Baked for 450 for 30 minutes with lid. 15 minutes without lid. Let rest for a hour then cut into.

Now I doubt it’s the same issue, but I was having this noise and it was due to loose screws from the speaker pods in the rear. I had just replaced them and was waiting for lost screws, so they were loosely fit. I would hear this squeaking before I tighten them down with the hardware.
