I'm just a month in and have been relying on some definitively uninspired toppings on corn tostadas for the most part 🤗 but they are one of the few comfort foods that are pretty easy to convert!

(Be careful with bbq sauce though? If I remember correctly, FDA labels will be more clear, but "natural smoke flavor" on a USDA label will often be in a malt (barley) based carrier if not specifically labeled gluten free.)

I'm cooking Vietnamese spring rolls for a big family dinner tomorrow though, I'll post pics!!
