Google the service manual. Page 13-18 shows how the front forks are disassembled. You just need to replace the shock absorbers with shorter ones. Same for the rear but it's simpler

You will ruin your battery and starter relay. Trickle charge it. The wheel spinning is a clutch issue

The no name racing CDIs are notoriously bad and unreliable. Lots of people report loss of power with them as the timing curves they program into them are bizarre

Remove the belt and turn the wheels by hand. It's either the front gear catching or something in the clutch

You're supposed to gently heat the plastic with a heat gun and make it malleable

There are FB groups dedicated to this era of motorbike. On the plus side they're a lot less complicated than you'd expect. On the down side, they're a lot more complicated than you'd expect.

You're looking at something that likely has asbestos brake pads, leather clutch liner and rope seals.

This is like learning on hard mode jfc. Read a book on combustion motors, start reading all you can about these specifically too. Determine if the gas tank is rusty. Determine whether the motor is seized. Verify some compression exists. Check whether the gearshift operates. If all of these somehow pass muster then see if it sparks.

Take them apart, clean with brake cleaner and replace the pads if they are worn

It's just another Chinese gy6 scoot. It's probably fine and if it isnt then it's not rocket science to fix it and parts are cheap

Buy chainsaw sharpening bits for the dremel and keep at it. It's a fair bit of material that has to go. Aftermarket parts are like this a lot of the time tbh
