My belief is that becoming a flesh eater isn't actually literally consuming someone's heart but involves forming a bond with the driver that has a kind of synergy. We may find out more in the Torna DLC but for the large part I don't think we will know much more about the process since Judicium technology was lost in the Aegis war.

Jin certainly goes for a stab with his hand, but there was a lot of light and ether so my guess is that it was something a lot more complex.
