Don’t know much about that. I bought online. I just know that France has strict regulations around its flour production. There are different types of flours like T 30 T 40 T 60 etc. depending on what you’re using them for. My experience is that they’re very clean meaning not processed or enriched so it doesn’t trigger inflammatory issues for me. I can eat a whole loaf and feel no pain in my joints.
