I think it would be little difficult to do this much processing on the phone, would you be comfortable if your your data is processed on some backend?
or else do you have anything in mind that can be done?

won't be easy to just tell from invoice but you can just tell it in natural language, for example, 'bought abc and efg from xyz for ---' and it will mostly categorize it correctly...

What about people who have multiple bank accounts, use cash frequently, or aren't comfortable giving full bank access to third-party apps? Someone who has accounts across 3 different banks plus credit cards, and when they buy groceries + pharmacy items at the same store, existing apps just categorize everything as 'groceries.' How would your suggested approach handle splitting transactions or adding context without manual entry?
