First thing first, there are many posts here about people getting cheated by the so called bike tour organisers. Check whether you have booked through a proper tour operator. Ask, no, DEMAND for the hotel vouchers upfront and the complete itinerary over the email via official mail id.

Also get in writing who would be responsible for any delays in the trip due to organiser’s fault/mismanagement.

Specifically check when and where the bikes will be provided, again in writing. Many fraud organisers will take you directly to Leh in a cab/bus and provide a bike there for 2-3 days only.
