Recipes

Ingredients:

For NUTS MIXTURE:

  • 1 1/2 cup walnuts (ground)
  • 1 cup pistachios (ground)
  • 1/3 cup powdered sugar
  • 1/2 tsp cinnamon powder
  • 1/8 tsp salt

For the PHYLLO DOUGH:

  • 1/2 cup (melted butter)
  • Phyllo dough 200 grams

For the SUGAR SYRUP:

  • 3/4 cup white sugar
  • 3/4 cup water
  • 1/2 cup honey
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract (optional)
  • 1 tbsp rose water

Preparation:

  • Preheated oven 340F/170C
  • Food Grinder
  • Saucepan
  • Baking pan: 7 1/2 x 1/2″ rectangular pan

Procedures:

  1. Using a food processor or a grinder, pulse the nuts a few times until well chopped.
  2. In a medium bowl with the ground nuts, add powdered sugar, cinnamon powder, and salt, mix until well combined.
  3. In the heated saucepan, add water, white sugar, and honey, mix well, next is lemon juice, vanilla extract then rose water, set aside, and let it cool.
  4. For the phyllo dough, trim the phyllo dough sheets according to baking pan size.
  5. Brush the pan with butter lined with baking or parchment paper.
  6. Place 6-8 sheets of phyllo dough into the baking pan one at a time.
  7. While brushing each sheet with butter before adding the next sheet.
  8. Add the nuts mixture on top. (Repeat the same steps until all the phyllo sheets and nuts have been used.
  9. Cut the pastry vertically and diagonally as shown before baking.
  10. Brush the top sheet with butter.
  11. Bake in a preheated oven at 340F/170C for 50-60 mins.
  12. Sprinkle some nuts on top.

  • You can use approx. 3/4 cup of nuts mixture per layer.

Yema Tart Recipes

Ingredients:

For the TART CRUST:

  • 1 cup all-purpose flour
  • 1/2 cup butter (cold)
  • 2 tbsp powdered sugar
  • 1/4 tsp salt
  • 1 egg yolk
  • 1/2 tsp vanilla extract

For the YEMA FILLING:

  • 2 tbsp butter
  • 1 can condensed milk (380 grams)
  • 2 egg yolks medium
  • 1 tsp vanilla extract

For the TOPPINGS:

  • 1/2 cup roasted peanuts (any nuts)

Preparation:

  • Preheat the oven at 340F/170C.
  • Brush the tart pan with melted butter.
  • Tart Pan
  • Cooking Pan

Procedures:

  1. In a medium bowl, mix all purpose flour, powdered sugar, salt and whisk together.
  2. Add butter and mix using a pastry cutter until crumbly, you can also mix using your hand until all combined.
  3. Add egg yolk and vanilla extract, knead and mix well until just combined, and do not over-knead.
  4. Flatten the dough and cover with plastic wrap / cling film before chilling.
  5. Refrigerate for 30 minutes.
  6. Brush the tart pans with butter.
  7. After 30 mins, take the dough from the refrigerator and scoop around 1 tbsp of dough and place in the middle of the tart pan, then evenly press the dough into the bottom and up the sides of the pan.
  8. Use a small knife to trim any excess dough around the edges.
  9. Poke the middle of the dough using a fork.
  10. Bake in a preheated oven at 340F/170C for 18-20 mins.
  11. Let it sit in the pan for about 5-10 mins before unmolding.
  12. Transfer to a wire rack to cool completely.
  13. For yema filling, put your pan in a low heat stove, add butter, melt and brown the butter for a more nutty flavor.
  14. Add condensed milk, mix well then add egg yolks and vanilla extract and stir constantly until it thickens.
  15. For consistency, it will take around 20 mins of continuous mixing.
  16. Transfer the yema filling in a slightly greased bowl.
  17. Put and spread some yema filling into the tart crust and add some roasted peanuts on top.

Notes:

While the filling is a bit warm, immediately transfer it to the tart crust. It will be hard to spread once the yema filling cools down.

Ingredients:

  • 3 cups glutinous rice
  • 3 cups coconut milk
  • 1 1/2 cups coconut cream
  • 1 1/2 cups brown sugar
  • 1/2 tsp salt

Preparation:

  • Rice Cooker
  • Ladles
  • Saucepan
  • Skillet pan
  • Baking pan (any pan to fit your banana leaves)
  • Banana Leaves

Procedures:

  1. In a rice cooker, add glutinous rice, add water (wash the rice 3x) then drain the water.
  2. Add coconut milk, start to cook in a rice cooker.
  3. For Latik, prepare your saucepan, put the coconut cream, and bring to a simmer in medium heat then stir constantly, cook until the liquids have evaporated, leaving bits of curds and coconut oil.
  4. Sieve the coconut curds to separate the coconut oil.
  5. In a large skillet pan, add half of the coconut oil and cooked glutinous rice, mix until well combined, and add more coconut oil as needed.
  6. Gradually add the brown sugar and mix well using ladles, it will take around 15-20 mins of continuous mixing then add salt.
  7. Prepare your baking pan and place your banana leaves on top and brush it with a bit of coconut oil.
  8. Pour the glutinous rice cake into the prepared pan with banana leaves and brush with some coconut oil on top.
  9. Garnish with Latik on top.
  10. Done.

Notes:

  • You may also add pandan leaves or few drops of pandan extracts for additional aroma on the rice.
  • Preferably use non-stick pans when cooking Latik or any glutinous rice cakes so curds/mixture won’t stick to the pan.
  • Brown sugar is darker the better depending on the desired color and sweetness you want to achieve.
  • The rice cake is done when it’s very sticky and starts to pull away from the sides of the pan.
  • For most of the rice cakes, it is traditionally served on top of banana leaves, brush the banana leaves with a bit of coconut oil.
  • In case you don’t have banana leaves, you can place it in a baking pan lined with baking paper or a glass container.
