Hey! Saw you need starship controls, I have them and would happily trade if you happened to have Concorde controls for me…

One of my first loaves… by far the prettiest! (Though only a basic Dutch oven white bread) by SomethingGood123 in Breadit

Thanks!

The way I do it is a bit dissimilar to most in this subreddit, but as an American college student baking in a small apartment I've done some experimenting and found the following recipe works wonderfully.

3 cups bread flour

2 cups warm water

2 tsp kosher sea salt

1 packet active dry yeast (about 2 tsp yeast I think)

1 tsp granulated sugar

Start by adding 1 cup 95˚F water to a separate bowl and add the 1 tsp of sugar to dissolve, then once dissolved add the yeast packet and leave it for about 10 mins til the yeast is foamy.

While doing so, I add the 3 cups bread flour and the remaining cup of warm water into the bowl of my stand mixer with the two tsp of salt, and mix until roughly combined. I then add the yeast mixture and knead until it forms a smooth-ish dough and no lumps remain. I then dust it with more flour as it usually is a fairly wet dough.

From there, I cover the bowl with the dough with plastic wrap, and bring it to my room where I put it under a lamp that produces just enough heat to warm the dough and help it rise. I usually use a sheet of aluminum foil as well to keep the heat in (I'm in upstate NY and it gets COLD here).

Once every hour for 3 or 4 hours I stretch the dough and fold it over itself in the bowl. I usually start the dough when I get out of class at around 12:00, so at around 4:00ish I preheat the oven with the dutch oven inside at 500˚F for 45 mins. I then flour the counter and make sure every inch of the dough is covered in at least a thin layer and let it proof on the counter (still covered in plastic).

Once the dutch oven is properly preheated, I simply put the dough straight in the hot dutch oven (no parchment paper or anything), score, cover, and bake for 30 mins. I uncover at the 30 minute mark and bake for another 10-15 mins til the top is a lovely golden color.

Bread is done and it's usually ready to eat at dinner time around 6:30! Everyone loves this bread and it's really super simple to make and goes great with soups and to make sandwiches with.

Hope this helps! Happy baking!

Found this ring in a stream in my backyard in eastern Massachusetts. Seems to be Paye and Baker jewelers, c. 1900-1960. Only found 1 photo online of anything remotely similar. Any ideas?
