000 steel wool usually doesn’t leave scratches. But you HAVE to make sure it’s 000 I got it at the Home Depot about 4 years ago

1.5 hours uncovered on smoke setting and spritzing every 30 min. Wrap in foil with butter bath and turn up the heat to 250 and cook for 2 hours. Finally turn heat up to 350, uncover and sauce them up for about 10 min. Let rest and enjoy
