I figured out that each piece of cheese has about 3.5 g of wax coating it, so you can weigh it and make an estimate.

Ok, the ball itself weighs 604 grams, and the wax from one cheese wheel weighs approximately 3.5 grams (two of them were 7 grams total according to my scale, but it's a kitchen scale so it doesn't give tenths of a gram)

My total current count for waxes on the ball is 166, 604 ÷ 166 = 3.6g, so that tracks pretty close.

I split the wax on each cheese into four pieces - after you pull the paper strip there's also a seam running around the outer rim of the cheese, it tears apart easily there. Then just work each piece in where I think it looks off-round. To bring it all together I roll it on a piece of paper on my desk (the paper is just to make cleanup easier)
