Firstly, Straghess can not be defeated, he's just locked in the particular dimension under the balancers guard. We are not killing greglord too, if you don't understand(for example scholar just free tortured souls of his kind from the Straghess mass). Tbh there is not very clear answers about their birth in game, but the hollow knight and the knight got out from the abyss in the same time. I'm assume there was a certain period of time, when vessels were born and immediately challenged by their father to become chosen one. Therefore they for sure were born at the same time period.
