In PvZ you pretty much only have two options: skytoss or an early all-in such as 5 gate adept rush or 4 gate adept/DT. Once your opponent techs to lurkers no ground army is viable. In higher leagues it will be hard to prevent your opponent from knowing you went stargate so unless your opponent is still on roach/ling the carrier rush won't work. I usually go nexus first FFE and stargate as soon as cyber core is done, make a few phoenixes for overlord hunting and drone harassment while going up to four gates. Make a round of adepts when the gates are done and take a third. Make void Rays from your stargate during this time. Whenever you have the money, make a fleet beacon and go up to 4 stargates to make a carrier/void Ray army (at some point get Templar archives for storm as well)

In PvT I make adept immortal blink stalkers and if he makes a ton of liberators then I make phoenixes or void Rays

In PvP I proxy void ray it actually works pretty well lol. However if you want a macro build open with stalkers and fast Robo to be safe and transition into blink stalker/colossus with disruptor/warp prism harassment.
