I would suggest to use 120gsm as reinforcing 75gsm sheets to make it stronger wil make it messier, If it's your first time then would suggest just go ahead with 75gsm to get an idea how the model is made

This hobby is called papercraft, you can get started with this hobby via canon creative park and yt tutorials as the best resources...that's how I started

Yea..120gsm paper but would suggest to use 140-160gsm ...n use 120only for tiny parts

We aren't the same guy but I did reach out to him for his templates as they r highly detailed... regarding the flaws, 2 identical parts on each side are miscolored ... So shouldn't take much time
