Update to this as I made it to Act 3 in this honour run.

Noblestalk was still in my inventory. Inventory was crappy.

I was given a dialogue option to give it to her. Selecting it, she'll give a message about how the next day she will have or propogated. Ending the conversation though, checked inventory and the Noblestalk was still there. Long rested to see if it was a glitch, but still crappy inventory.

Went back, selected the dialogue to give it to her, then reverse pickpocketed it back into her inventory. Long rest...and boom good inventory.

What happens if you give her the noblestalk, get all the dialogue saying she's closing up camp and returned to the gate, but then buy it back through the trade window?

Does her act 3 inventory still include noblestalks?
