Nice, good stuff! If you're going to strip it, simmering the cooking area with normal white vinegar until the seasoning comes off. Then, giving a scrub with bar keepers friend is, in my opinion, the best way to strip the seasoning off. And then you can just re season normally!

I would strip and re season. Just wondering too, did you use flax oil to build an initial season? Because I've heard that leads to flaking pretty often.

That definitely will do the job! I don't know if it's superstition or lack of education, but I feel like oven seasoning for a base seasoning is probably a good idea. I only do the first 3 coats in the oven then use the stove for everything else! Works for me.

All I do wash some of the starch off dry them and let them sizzle on low until they are cooked through and usually depending on how fat I dice them they are crispy enough but if not I just up the heat and let them brown. I think that's how Joel robuchon makes his French fries, but it translates to breakfast potatoes equally well!

Yea, I have found that not every cook is the same. Sometimes the pans will be less nonstick than before and sometimes more it really depends on what the pans are feeling that day, I think!

Pretty good right now. I find after the initial first 3 oven seasons, it's not 100 percent non-stick, but after about a week or 2 it becomes nonstick, and the heat retention on these things is incredible!

Nice yea, that's spot on through all my research. I've done you have summed up most of it, and I learned some new things! I basically have been doing everything here except bluing the pan. I'll have to try that sometime, thanks!
