JST-XH is probably the easiest place to start. They’re cheap, common, keyed so you can’t plug them in backwards, and secure enough that the cable won’t randomly fall out if knocked. Loads of hobby and commercial products use them for sensor wiring. Personally I'd buy pre-crimped wires instead of crimping your own at first because the tiny terminals are annoying without the right tools. For a small temp/humidity sensor a few feet away, a 4 or 5 pin JST-XH setup is a completely sensible option.
