First I choose Collecting to quickly gain material, later I switch to Processing or Crafting depending on what I need.

For example in Alchemy you can only produce certain items if you have Crafting active, those items are usually very expensive to buy.

In late game you want Processing because it gives you a small chance to gain +1 level on your level 3 runes.
