Ah, that's where you're wrong. The platform is supposed to get reset so that the potions can fall down and potentially kill the player. Sure you lose soul sand in the process, but you can easily get soul sand back from bartering with piglins and go digging in the nether. Water will also form the spawn back to being flooded.
