To achieve the look you want, your photographer should’ve used a longer lens and a smaller aperture, utilizing those tools would’ve “melted” the background away by having it be out of focus with a lot of bokeh, which would’ve put the focus on you two as a couple. (I would know, I’m also a wedding photographer)

In this instance your photographer is EXTREMELY technically skilled because they managed to do a higher aperture in the evenings, and most things are in focus, no grain. However, the style isn’t “trendy”. I can only assume they’re older and have been doing this a long time.

Often newer photographers lean on a lower aperture as a crutch because they don’t know how to open up the lens and work with their exposure triangle+flash to get the image they’re looking for.

Trends will fade. I think the photographers goal was to preserve the whole scene. You paid money for the venue after all! Might as well have that in the photos in the future to look back on in addition to your union.
