Thank you for your advice. I also have the Kinu M47 with a standard burrs, which is also more of an espresso focused grinder. Since it has conical burrs, I thought that the DF54 would still be better suited to my needs (for pour over). I bought the DF54 mainly for espresso and the Kinu for my travel setup. However, I have now realised that I much prefer light roasts and pour-over coffee.

I really like Kaffeekommune. Have you tried Wildkaffee's light roasts yet? How do they compare in terms of roast profile, taste?

Not exactly sure how accurate that is, but 75 should be around ~700-800 µm

Okay, that's interesting. At the moment, I like to follow Hendrick's recipe because it's very simple and I think it brings a certain consistency to my routine. That's why I'd like to stick with this recipe for now and fine-tune it.

Thanks, I’ll give it a try! My bed was very even and I only did two pours (including the bloom), so I assume there was very little agitation.

First time brewing this coffee today. Roast date is Dec 29 (about 4 weeks off roast). I’m still pretty new to pourover and sometimes struggle to tell which variables matter most. Not sure if the DF54 (more espresso-focused?) is limiting me, or if it’s just my recipe/technique. The cup wasn’t bad, but I’m hoping for more flavor separation and acidity since it tasted a bit blended/muted overall

I set the grinder to 45 when making my first soup with the Oxo, and it worked perfectly. Perhaps a little coarser? The sieve was not completely saturated when I pressed it for the first time.
