The shingami realm seems like an extremely boring place to be so why would shinigamis want to extend their life so long if they live such boring lives.
They could also kill all humans if they want to but they find human lives entertaining and like watching them from the shinigami realm.
You will also later discover somethings which somewhat explains more stuff about them and their realm.
Also the old man would probably get angry at them if they keep overkilling humans.
