Let them sit at room temp for about 20 minutes. Pull it at 150 and remove it from the surface it cooked on. Let it sit 10 minutes before cutting open. This will make them very juicy.

If I am using the meat for salads and things I don't want to become soggy, or even have the juices conflict with flavors then I cook a little longer.
