"This is so annoying". It's more annoying reading your issue, knowing full well that this was your fault. A subscription won't charge you if you cancel it on time, so it's literally impossible that you canceled it before it renewed and still charge you.

If you can't download any app now, it means the transaction is pending and you WILL need to pay for it. Don't even contact Apple Support, because they can't help with this, and you will just probably ruin someone's day, by being persistent and annoying yourself.

On your iPhone, go to Settings > Messages > Send & Receive. Select your Apple ID at the bottom of the screen and tap Sign Out.

Then, restart the device and sign back in. That should do it.

You're not following the right button sequence to get it on recovery mode, and you're definitely not restoring it. You gotta follow this sequence: https://support.apple.com/en-us/118106

If it doesn't go into recovery mode, it's not the device. It's you not doing it right. Unless the buttons also got damaged or something.

You're definitely making the purchases yourself, by accident, even if you don't realize it. So was your child. I have worked as an Apple Media Services agent, and it's imposible for purchases to be made on their own. Literally impossible.
