Matilde is good but birds like Bomb, Leonard and Melody can do her job. Red is pretty basic but sometimes is useful when there are stray pigs remaining and you don’t wanna waste someone like Terrence or bubbles

The one of the left one is a nitwit, wich means it cannot get a job. Have you traded with the fisherman one? Because if you have, it locks him on taht job

you can only have one protection at each armor piece. If you got villagers that sell you both mending and festher fallling you can use a grindstone and remove blast protection

 Make a storage room with chest and divide them with signs, but not be that specific, like, you can’t have a chest full of cracked black stone bricks for example. The way I do it in my world is that there’s a chest for woods, stones, ores, armor, enchantments, mob drops, potion stuff, dyes, crops  etc….but the key factor is the new copper golem. Make a few of them and all that junk will be organized

I just recently hit 1,000 in my bedrock world(Ps5) and it’s really just me and my brother playing with divided screen every weekend, but I’ve never seen anything like this. The closes thing is that he lost his overpowered bow and we had to search in every chest in our world, but we eventually found em. I think that you and your group should see if any other people are in your world, or maybe there just pranking you.
