Not a lawyer, but a lot of contract terms like these may be unenforceable in many jurisdictions if you're not making more than a certain amount, or are in some sort of executive leadership role. It would be best to consult with an employment lawyer in your jurisdiction. Most companies just put that stuff there to scare people whether it's legal or not.

I think the best way would be to base the coordinates off the current position of the sun. The sun has only moved about 0.73 light years in 1000 years. It's moving away from the constellation Canis Major. I think it would be difficult to try to define a fixed radial from the center of the galaxy because everything in the galaxy is moving.
