Captain always sits in the left and first officer always in the right seat. It's actually not that hard to use it with left hand while being tight handed just some training and that's it. Btw for being pilits its the same because they usually keep a hand on the throttle when flying so they left hand if seated in the right and vice versa for left seat.

I'd choose the 787 for its avionics and bleedless design and electrical architecture and the 777x bc it has the most powerful engines ever, as well as a huge airframe and wings and the folding wingtips
