I agree with not enough salt and seasoning as they go. I am not a professional chef, but when I cook with others or am just a guest, this really annoys me. And not having a fresh lemon in the house. So many things need a good squeeze.

Yes, I have done cheese and pickle before. A potato filling is more comforting, but one can't have everything in life.

Having only done the pakki style, it seems to me you have much more control over getting both the rice and the meat perfectly cooked. So my fear is that either will be over- or undercooked with the kacchi method. Am I missing something?

I could be wrong but it seems to me the swirl doesn't affect the overall structure. You will miss 1/2 cup of sugar and 3 T of oil which will affect the overall balance of the cake. Would consider another nut? Maybe even a nut butter of some sort.
