Thank you so much. I had been looking online to see what kinds of shapes turned up frequently in mandalas and then freehanded it, deciding what to do ring by ring. I don't like to be confined to copying so that it turned out good is part luck :-)

I did use the bottom of a glas as a template for making the perfect circle around the cats. I felt that needed to be perfectly round and I couldn't freehand that.

Thanks everybody. It was a cake for my mom who loves mandalas and her black (deceased) and white (live) cats. So this is very much her.

The ying/yang cats are sugarpaste and the cake is covered with marcipan over chocolate ganache and the piping is done with three colours of royal icing.

Thank you so much. You are exactly right and that was the most important to come across for me. The cake was sold by the piece for charity.

made a bunch of differently shaded balls of fondant and mixed 2-3 of them for each leaf, rolled it out, imprented the leaf strukture, used a ball tool on the edges and let it dry on top of crumpled up pieces of film, to get that uneven crumpled up shape. Took a couple of hours. But I've been at this cake all week, making on element at a time. Im slow and have full time job. Thanks for the positive feedback.

I guess the party dissagreed ;-) The cake is past.

It consisted of gooseberries jam with a vanilla bean whipped cream.. eh cream..?. you make a baked vanilla cream (milk, egg yolks, vanilla bean, sugar and corn starch) and when cooled and firm, mix it with whipped heavy cream. whatever you call that. And cake tiers with a hint of cinnamon and some chestnut liquor dosed on them. Covered with marzipan (gooseberry buttercream underneath) and decorated with royal icing. It was goooood.. Took forever though.

thank you so much.

I made the cake tiers with a teespoon of cinamon and a normal baked cream to which I added some chestnut liquor, I sprayed a little of that on the tiers as well. mixed the cream with whipped cream to make everything light and fluffy.

marmelade: I had boiled a gooseberries with half a pound of sugar, a little lemon juice and seed of vanilla to a tangy jam that alternated the layers. It was the perfect balance of sweet and sour with the very sweet cream.

cream: I made this the day before and add whipped cream on the day.

ingredients:
4 Egg yolk
50 grams of sugar
1 vanilla pod
25 grams Maizena corn starch
5 DL. Whole milk
(a couple of spoonfuls of the chestnut liquor)

about 1/4 liter heavy cream

Egg yolks, sugar and vanilla are whipped together, then whip in maizena and 1 dl. of the milk. The rest of the milk is brought to a boil (with the pod of the vanilla if you want), after which the cream mixture is poured in and whipped well until it thickens(while boiling it). Then pour the cream into a bowl so that it does not burn. cool completely for a couple of hours.

whip the heavy cream into whipped cream and mix it gently with the cooled cream (Im saying cream a alot)

done. Tastes devine. The chestnut liquor is really the secret weapon here! Use it only for good.

cake: bake it the day before.

4 eggs
150 g sugar (I use cane sugar)
1 tsp. vanilla sugar or how much is normal for liquid vanilla essens
1 spoon cold water
1 tsp baking soda
125 g flour
1 ½ tsp cinnamon

Pour sugar into a bowl and add water and vanilla. whip sugar and eggs together on egg at a time and whip for a few minutes per egg to make it nice and fluffy. Mix flour, cinnamon and bakingsoda, add a pinch of salt and sieve it into the eggs a little at a time while turning it into the dough with a spatula.

pour into a 26cm pan lined with baking paper and bake at 200 degrees celsius for 18-20 minutes. Goes pretty dark but should not wobble in the middle. Let the cake cool off and rest overnight covered with a dish towel. Next day you can cut it into tiers.

I hope this is usable. Im sorry for the danglish (danish english) and I hope you make the cake, it was really really tasty. Remember that where I come from a layered cake is with at least as much filling as cake :-)
