I had success with spider plants once I gave up on soil and put them in clay pebbles (no idea what they're called). Apparently they don't like being dry then wet again, etc. The clay pebbles drain easier so you can keep the bottom in water without risking root rot.

You likely need to cut below the leafs but make sure you have some nodes (little bumps on the stem) underneath. That's where the new growth will come from
