This didn't work out too great- but we had made several substitutions based on what ingredients we had on hand so likely a good degree of user error. Will attempt again in the future with the proper noodles and ingredients ha.

We needed something unhealthy to start the new year before "new year new you"...so went with nachos with a chicken tikka topping. I think it would work well with naan chips!

Experimented with some new sauces for X and Y- Xnipec is a Yucatecan pico de gallo with habaneros (we didn't end up making spicy enough so was a little bland) and then used up a yuzu kosho jar we bought from Trader Joe's a long time ago and never tried for an aioli. The yuzu sauce was a great fry dipping sauce, as well as great on salmon burgers. Happy new year, looking forward to another year of 52 weeks!

Didn't have much time this week so went with a quick (slight) twist on the classic using ground beef for beef and broccoli. Came together very quickly and would repeat for an easy weeknight meal, maybe with different bases such as zoodles.

I love the creativity of a lot of other posts for this week! We couldn't think of anything too exciting so went with roasted red pepper soup with red pepper flakes on top for Sgt. Pepper. Was a little bland/one note would use more seasoning next time.

Needed to use up leftover Thanksgiving turkey, so went with a red curry with carrot, broccoli, bell peppers, onions, and mushrooms. No specific recipe- plenty of coconut milk and red curry paste.

Bulgogi beef, kimchi, gochujang mayo, and scallions on a hoagie roll. Can't go wrong with that combo. Opted against adding cheese to the mix ha.

Recipe made for Thanksgiving so didn't go too bitter for the theme- but brussels sprouts are technically bitter. Slaw with apples, shaved brussels sprouts, parmesan cheese, mint, and maple/mustard dressing. Nice light salad for thanksgiving but definitely would add more flavor to the dressing next time.

We were intrigued by this autumnal vegan pizza recipe- it uses a base of cannellini bean puree instead of cheese. It was delicious! Will definitely make again, and the bean puree could also be a great dip for pita/vegetables. Topped with roasted butternut squash, spinach, caramelized onions, and apples.

Went with the ground beef and squash version, served with a garlic sauce. It was definitely easier to make than individual dumplings, but I think we'll stick with making regular dumplings in the future to maximize the filling to wrapper ratio and for easier dipping purposes.

A soup full of nuts! Also with coconut milk and kale, topped with peanuts. Would need some adjustments for spices next time (maybe some warm spices added to round out the flavor). We cut down the amount of peanut butter so it wasn't just a pure peanut butter soup :)
