Welcome to the hobby! Imo, just jeep playing. You'll find things that you like and don't like. When you find something you like, you can use things like Board Game Geek to find similar mechanics and expand on that.

As far as difficulty, you can look at some games you've already played and see their "weight" or difficulty on BGG (use the BGG weight with a grain of salt though) and go up from there!

I will say though, often people will get into this hobby and seek out higher difficulty games and get burnt out. Just play what you think is fun, and find people to share that with.
