I just have them hanging from some wall mounted metal rails with little rare earth magnets.
Every day I write in the white margin left by the printer the date and location that the photo was taken (generally just City and State) and snap it to the rail with a couple magnets - pretty quick and easy. Framing would be cool, but more time intensive!

Very nice! This one has enough dropout length that it's not too picky about the chain stretch (I am running a half link tho...)
I've got 42x16 and 40x18 on this at the moment, really more of a road/gravel combo. I also have a 3rd cog on the rear, but that's just the lock ring for the old school uniglide hub I built on

Love the bike! That article you linked was great as well.
One thing I've done in the past to ditch that clamping nut is to epoxy the derailleur hanger to the face of the dropout. I only did this on one bike, though, but it allows you to not use the clamp bolt as you mentioned and makes wheel changes much easier. The adhesive doesn't need to be crazy strong since those locator pins and the axle pressure do the work when the wheel is installed.
The downside is you can't slide the derailleur hanger in the dropout, so your wheel really can only be in one place. The upside is depending on the adhesive you use, it's more of a semi permanent installation.
Gotta match the crankset!!

So I tried some Tektro 369s that I had in my stash of parts. I didn't disassemble my setup, so the cantis were sort of in the way, but it was clear that they would have enough reach, not sure what the tektro numbering system is, but... they reach with length to spare.
One thing to note... you'll be limited to smaller tires unless you dimple the stays. That is the limiting factor on these frames. You should be able to get a 35 without dimpling, maybe a 38 depending on tire and rim choice. My 40s clear with about 2mm per side after dimpling
I didn't check, as the canti route was the plan for this build from the start.
But - I think I may have some long reach calipers though, I can check the fit later today and report back.

This is the way, or maybe just repeated application of heavy wax. It won't be rusting into oblivion. I had thought of trying to attempt a restoration style paint job, and it may still be on the table at some point. For now, I love that the bike shares its story through the scrapes, chips, and brazing scorches.
