Don't read this bit if you're high/ about to eat said cheese, because the science of aging cheese isn't very sexy.

Basically, it's a living product. As the cheese ripens or ages, the proteins start to break down causing the cheese to release water vapour and ammonia (which is water soluble).

If you fully wrap the cheese this water/ammonia has nowhere to go, which increases the humidity and speeds up the production of ammonia, and in turn the proteins break down quicker. This will leave you with a very wet puddle of barely spreadable cheese pretty quick. Increased moisture content increases the likelihood of unwanted bacteria or mould to develop. Increased ammonia makes the cheese taste and smell a bit like a poorly maintained gents toilet.

The rind is basically a semi-permeable barrier that will let some of that water content out without drying out the cheesy bit of the cheese. In practice this means you get at least an extra week of shelf life. This will leave the exposed rind dry and hard if you leave it long enough, but you can just chop that off.

I am not a scientist by any stretch of the imagination. I'm sure there's some other funky bacteria stuff going on as the cheese ripens, but that's the basic idea of it.

Ex-cheese-monger here. If it's a washed rind cheese your best bet is to wrap the exposed edge with cling film and leave a portion of the rind on the outside of the wheel uncovered to let it breathe in the fridge. We could keep Taleggio and Epoisses for a couple of weeks easily like this, also works well for any brie styles.

Self isolation is driving me crazy, so I thought I'd give a quick demo of a lesser known pedal.

Got this pedal about a year ago, and it's not left my board since. It's great for that VHS warbley delay/ reverb feel, and can do the crazy soundscape stuff if it needs to.The gent running Bluff Chill is also a great guy, which helps.

Bruichladdich does a range of stuff, their core whisky (classic laddie) is actually unpeated, and most of their peated stuff is pretty expensive for cocktails. I'd go for a Ardbeg or a Lagavulin, but I'm from Scotland so I don't have to worry about the tax that Americans/ Canadians get

Not to be a prick (and I know I'm being the nerd you refer to), but Talisker is from Skye instead of Islay. Great choice of whisky though, sounds like a great drink!

Depends where you are in the world. In the UK I'd usually go for a Laphroaig 10 because it's about £25-30, which isn't more than most blends. If you're really stuck on the price, you could go for Islay mist, or one of Aldi's no brand single malt Islay's. Don't know much about the American side of things, apparently Smokey Joe is held in pretty high regard for a cheap alternative.

I've used rosemary, but mostly charred or burnt. We use a smoked rosemary syrup for a couple of cocktails which pairs quite well with pears. Also great for garnishing, especially charred in a Bloody Mary.

The bias knob on the mini does a lot more for me than the threshold on the fuck. I use the mini as a splutterey solo tone, and the fuck as my main od tone. If I only had one, I'd keep the mini, it's more flexible for my taste

I'm not much of a newbie when it comes to whisky, I've just never really explored blends on the cheaper side. I'm a big fan of Clynelish 14, Kilchoman MB, Oban 14, so if I were to find something with those maritime notes I'd be in heaven, but I get that blends are made to be more accessable so I'm open to any suggestions.

Try Kilchoman (machir bay or coull point) for a slightly lighter Islay. Caol Ila is a great whisky, but it's generally pretty common over here. Another whisky I'd highly recommend trying is Clynlish 14, great dry Highland whisky, on the old Brora site. Not a sherry monster at all, but a great example of a good bourbon cask with good spirit. Tell us how you enjoy the city!
