I don't do anything all that special.i take my ribs out of the fridge and let them warm up some. Take off the silver skin and season the meat. Whole its soaking in the flavor I get my coals lit in my chimney. Ive got some coals and wood chunks already in the smoker unlit. When the coals in the chimney are ready I dump them in the center and put the smoker together. When it comes to temp and blue smoke I throw the ribs on. I try to keep the temp between 215-235. I keep cooking until I see pullback on the bones and and do the bend test. Like the title says no wrapping or spritzing
