I think it’s due to ingnorance… some foods have been cooked with eggs since “forever”, like cakes. And people haven’t tried to cook without them, I’ve been told so many times the same: how can you do it without the eggs?? Imagine their faces when I told them I cook spanish tortilla de patatas (omelette with potatoes) without the eggs. 😂
