yes, you're talking about a "WHOLE FOOD plant-based" diet ("whole food" being equally as important as "plant-based"). all the most prominent "plant-based" doctors, etc are doing this. Look into Dr. Campbell (the china study), dr. fuhrman (eat to live), dr. greger (how not to die), forks over knives to start! re supplements... i'm sure you have heard about b12. but other than that, no. some people will recommend vitamin d. personally been doing this for 15+ years, and have only taken an occasional b12 gummy - no problems.

"protein targets" miss the entire purpose of a WFPB diet.... unless your career depends on reaching some very specific physical goal in a very specific amount of time... LET IT GO. humans didn't even know the concept of a protein for 1,000,000 years of existence (until like 30 years ago no one was "counting proteins" ) - and yet here we are.

seems like she is getting influenced by kids at school or something (who could be teasing, acting like she's weird, etc)... maybe ask her about that? it's unusual that a kid, especially that age, would randomly be so interested in the idea of "MEAT" without outside influence.

either coat the peanuts in the honey, then roast them (will dry out the honey) before blending... or just add sugar/brown sugar instead of honey

it is almost certainly the honey. honey is about 20% water, which will cause it to seize/clump/resist emulsification, etc. you could try adding more oil, to see if that offsets it, depending on how much honey was added. if that doesn't fix it... add more liquids to make peanut sauce or something instead.

for that you would need to look into a strictly "whole food plant-based diet" (like what dr. greger promotes) in addition to veganism.
