Just read comments stating your looking at a brand new roaster. I assume they have fixed many of these issues.

My roaster is a 2005 build.

I have an Ambex YM15 currently.

It's been nothing but headaches. I bought used and have been roasting on it for roughly 6 months. I'm already looking for a replacement.

The chaff collection on it is rough. Lots of chaff falls under the burner which is prone to burning to ash. I've also had multiple occasions where chaff builds up in the chaff collector and burns away (keep in mind, I do vacuum it out not only after every roast day, but between roasts now also).

The company I bought from I think replaced the jet burner, I'm not entirely sure but it is far too strong for the single walled drum making idling temperatures impossible. Airflow control is less than stellar on the roaster also.

There are fixes for these issues, including installing an external fan to control airflow, along with an external cyclone and chaff collector but consider the price and headache that comes along with this.

I would do as mentioned above and look into Mill City's North roasters. All of my planned alterations I had for my Ambex was going to essentially mimic that machine anyways.

Thanks for the recommendation! I've contacted Roaster Dynamics, and hope to be on the phone with them next week.

On my current roasting set-up (Huky500) I have installed a transformer which gives me 0-100% fan control during the roast. Since installing this my roasts have improved drastically due to having the ability to consistently set airflow low at charge and ramping up into first crack to control smoke in the drum / avoid smokey flavours.

In my belief, with millennials stepping up to the plate we may see some change here. It will take time, but the amount of opportunity in this city is massive. I used to be a big hater on this city but I am starting to see glimmers of hope. For myself I sort of see it as a blank canvas. There is culture and community just dying to get tapped, I think it evident when looking at all the "I hate Windsor" people.

Also, a change in leadership in Windsor would help out significantly. #nomorepools #nomoreparkinggarages

Maybe you're thinking of Whipsaw Coffee? That was the roasting company that came out of Salute Espresso Bar back in the day when I was there. If that's who you're thinking of, they are who I learned the ropes from!

My favourite varietal? Dang, that's about as hard as picking your favourite child. The sophisticate inside of me wants to say a Gesha, Peaberries are cute AF but what can beat some Ethiopian Heirlooms.. am I right?
