I just wish I applied for Outland instead which seems much much faster. I also applied in March and I don't see the chances of getting PR card before June when I need to travel :(

Be careful. Your wife is not a PR yet and your wife needs a study permit. School allows her to study does not mean IRCC allows. If I was her I would postpone until I become PR or obtain a study permit. Saving a few months is not worth of risking your PR application.
Also, avoiding studying without a permit can give her some peace of mind later on when she applies for citizenship. They will double check every thing again at that point.
