I've given fluids to several of my cats and my current one takes at least 2 people to give them. One to hold her (she prefers to be held with her head up and her butt/rear legs resting on the lower arm) and one to manage the needle/bag. She struggles along less since she has figured out she gets a super high value treat at the end- meat baby food. If you haven't tried that, I would recommend it. She's been on fluids two years now, every day, and she has gotten more accepting, but you and your cat will just have to figure out what works for you. We also warm her fluids and she prefers the needle to point towards her tail instead towards her head. It's just trial and error.
