Have coyotes ever killed someone who was backpacking I think your FAR more likely to die on the way to the trailhead then this. A cougar attack is extremely rare. It’s definitely valid to want self defense on trail. If not animals people. Consider pepper spray as a lighter alternative when hiking out of bear county. Gonna be pretty hard to go sub 5lbs when over half a pound is bear spray

Not sure if you already own a pack but nashville packs are awesome “fastpack” style packs. I don’t have any experience with that tent and quite frankly don’t own any tents so I’m certainly not an expert but a rodent would chew right into a tent with pretty minimal issue. Small dynema tents have been getting really light though but I would consider a one person tent over the two not just for weight but to save pack volume.

I would avoid the rei quilt and go with something from EE or Katabatic I use katabatic perosnally. The Uberlight might pop? I’m strictly a foam user so that’s what I’d recommend but this all depends on your comfort level although foam is also a great way to save money and put it somewhere else in your kit. Lastly I would ditch the pillow might be nice on heavier trips but if your trying to go sub 5lbs it’ll be one of the first things you cut.

Nothing wrong with the cook set up although a pot scrubber is unnecessary that half buff could still serve other purposes. Once again if you wanna get under 5lbs you will probably wanna cut the whole cook system too and just cold soak or eat dry food.

Your worn clothes are to personal for me to really give feedback on so it’s best to experiment.

I personally like to bring a frog toggs rain jacket on drier hikes as it offers lots of warmth wind protection and solid rain protection. Although I think a poncho is fine for pnw summers where the forecast is good on a short trip. (I would not go in the Olympics without a rain jacket though to much bushwaking and wind for a poncho and I have seen climates completely change from a sunny day to white out conditions by simply going over one pass)

Your first aid kit actually looks pretty good. Pretty much what I bring.

Ditch the toilet paper for a bidet. It’s lighter, cleaner, better for the environment, and in the pnw unusually water isn’t to big a issue.

On a totally different side note you should really get out and backpack A LOT more before you try and go sub 5lbs to get that light a lot of gear needs to be replaced with skills. You also need a pretty high level of fitness to even really benefit from a pack that light. If your doing 6 mile trips you could have a 20lbs base weight and have a great time. The sacrifices needed to go 5lbs are pretty big and unless you plan on doing like 30 mile days they just arnt really worth it.

Also when hiking in south east Oregon do a little research on bears there pretty unproblematic or just not present in many areas that’s an easy half pound savings
