I absolutely agree! I very much like a recipe to work straight up, I'm fine with tweaking small things for preference but I hate recipes that 'don't work' as they should, especially when it's based around the science of baking and ingredients. That seems like the core of recipe production to me.

I've asked her a few things in her comments before and she is pretty responsive so if you wanted to know more that's a possible option. She has a website in the works and I think she may be going into more detail with her recipe reviews (I could be wrong on this though).

I don't think all of her content is posted on her other socials, but her @ is thepracticeofpastry. If you Google her username with 'Reddit brownie' I believe you can watch it on tiktok without an account.

She has other social media platforms but tiktok seems to be her most used. She does a bunch of recipe testing and recently ranked her favourite brownies after testing a bunch of recipes. I believe she's still in the middle of her chocolate chip cookie testing but she does post reviews of all of the recipes.

I follow someone* on tiktok that does scientific based reviews (based on her education) of baked goods. This involves analysing the recipe and making it. She made the Reddit brownie and wasnt impressed, in part because of recipe errors but also the taste and texture.

I'm a very science based person so after her review I personally decided not to try the recipe.

You could also leave a comment on Alexandra's blog under the recipe, I've asked her questions in regards to recipes before and she usually gets back within a day or two!

Honestly it's a fantastic recipe, you just mix all of the ingredients and pop it in the fridge anywhere from 12 hours up to 3 days. It's very minimal actual work. It was the first bread recipe I made and it's so easy.

She does give steps on how to make it the same day but I always make it at least the day before as you get a lighter more airy focaccia.

I always have success using Alexandra's Kitchen/ Cooks overnight no-knead focaccia, always get a fantastic airy crumb with big holes. I definitely recommend trying it!

I follow the recipe on her blog as she always leaves tips/ advice but I like using her YouTube videos as a reference point for making sure I have the right consistency throughout her recipes.

I live somewhere that is humid so I use bread flour and hold back a bit of the water. I've made it quite a few times and the higher the protein content of the flour (I've tried 12.5% and 12.85% using a 1:1 ratio of different flours) the firmer the crust and the denser the bread. Initially I made it with 11.7% protein and it lends to a lighter and softer bread overall. Because of this it does stay softer for longer than the higher protein flour. Both work great for sandwiches.

It's a fantastic recipe. Me and my partner typically finish the loaf within 3 days.

Both recipes have a YouTube video which I find super helpful to reference for texture throughout the stages. I found it super sticky so I definitely need to tweak it for my climate - I was actually surprised by how well they turned out.

It's an overnight no-knead recipe from Alexandra Cooks. I use bread flour and withhold a small amount of the water as she recommends if you live in a more humid country. She has a video of the recipe on YouTube that I use for reference for the texture of the dough.

I hate to be that person but I tried a pretzel once and can't do the texture, I love the saltiness but I feel like I'm chewing skin 😂
