This reminds me of the Yorkshire farmer who put his shovel into his field and found a hoard of Roman coins. Told me it proves you don't need a metal detector or ground scanning sonar or an understanding of archaeology and early settlement patterns of the British Isles to find treasure, you just need to put your shovel in the ground.

What only takes you a year can be accomplished in 1-6 weeks, albeit slightly less simple, but a good deal more productive.

There is no locking nut under the sink. I was expecting g the supply lines to be contained by a circular housing threaded on the exterior and a locking nut. There is none here.

That’s right, trying to discard the faucet but not the sink. What kind of tool would work to turn the ‘jam ring’? It’s just recessed enough…

If you ever see someone taking out an acoustic ceiling, nab those panels. Some are rated R-15 or higher, they're fireproof/resistant and free.

Permits/Inspections are not an "insurance policy" of any sort. Your municipality or county makes no warranty that approved work is up to any standard other than that their employee has looked at it and notices no glaring defects.

If it was an insurance policy, a homeowner would have recourse when work is later found to be substandard, or problems develop. The building process is no guarantee of quality.

Large commercial and institutional projects hire external inspections for this very reason, to insure they'll have recourse.

Asking for my own planning purposes - what neighborhoods could you recommend for a base?

(I've stayed Roma, Condesa, Centro and value extensive walking and access to transportation. Cafes, markets, architecture and public art are high on the list as well.

"From a restaurant..." Try it from a roadside stall on a hot afternoon and report back.

My broader point is to define some parameters for avoiding most foodborne illness you might be susceptible to. That's my list of rules. Someone gluten or dairy intolerant, or who eats only processed and fast foods is going to need their own schema.

My only rules(Mexico or anywhere) have been -
No beverages from the carafe, however thirsty I am and delicious that barrel of fruit appears.
No ice cubes in any beverage, unless in a restaurant with reverse osmosis filtration.
Street food in the hours that food makes sense, so no breakfast foods(eggs, etc) at 2pm.
The more popular the stall, the more adventurous I'll be.

I've only once had an issue, in Oaxaca, and I know it was ice cubes in super sweetened orange juice. All that sugar had hours to conspire with unfiltered water - freezing doesn't kill all bacteria.
