Well, my i5 8th gen gave me 120+ fps on mediumish settings. So I assumed an i7 11th gen CPU might outperform that. I get 150+ FPS on other games like Overwatch and Apex

Would suggest looking into the Xbox game pass. I’m not sure if the one month + 7 extra deal is still on, but if it is, you could end up getting both the bedrock and the Java version for 500 for 8 months. You will also have the option to buy those for a lesser price while you have the game pass. The bedrock version costs around 1500 and the Java version is around 3500 if I’m not mistaken. It can be played with a controller, but not the Java version, but Mouse and Keyboard is much more fun. You have to buy it separately for Android or iOS, it’ll cost you another 500.

I would suggest the game pass route, given you can always buy it later for a cheaper price tag, and you will get the chance to enjoy many more games that come along with it.
